Leek, Potato & Kale Soup

This deliciously creamy soup is a clever way to get your family to eat kale, a most nutritious green vegetable. Come home to steamy hot soup that just needs to be blended before serving.

Ingredients

  • 1 tsp ghee or olive oil
  • 2 medium leeks, white and tender green parts only,
  • rinsed well and thinly sliced
  • 4 cups broth
  • 1 large potato, cut into ½-inch dice
  • 2 cups rinsed and chopped kale leaves
  • ½ tsp sea salt
  • 1/8 tsp nutmeg
  • Freshly ground pepper to taste
  • 2 tbsp finely chopped parsley for garnish
  • 1 tbsp finely chopped chives for garnish

Directions

Place all ingredients except nutmeg, pepper and garnish into the crockpot and simmer on low for at least six hours.

Using a hand blender, purée the mixture until smooth. Add nutmeg and pepper, and then reheat.

Serve with a sprinkling of parsley and chives.

Serves 4.

 

Not Fried, Fried Chicken

 Not Fried, Fried Chicken, Fresh Veggies and Dip

Most kids love chicken drumsticks. This recipe takes a few minutes to prepare and will be a hit with everyone at the table. Add some fresh veggies and dip and call it dinner!

Ingredients

Not Fried, Fried Chicken Coating

  • 1 cup flour
  • 1 small pouch of tomato cup-a-soup (3/4 oz or 21 g)
  • 1/2 small pouch of dry Italian dressing mix (3/4 oz or 21 g)
  • 1 1/2 tsp baking powder
  • 2 tsp paprika
  • 1 tsp salt, coarse kosher salt or sea salt
  • 2 tsp pepper (fresh ground is best)
  • 2 egg whites
  • 12 chicken drumsticks (1 1/2 - 2 lbs or 675 - 900 g) cooking spray I like Pam.
  • 1 lb or 450 g celery, carrots, tomatoes, broccoli, cauliflower, cucumber, etc. or use precut fresh veggies, approx 4 cups
  • 1/2 cup ranch dressing, fat-free
  • multigrain bread or bread sticks (optional)

Directions

Preheat oven to 400° F. Pour the following ingredients in a medium size bowl to make a coating mix; flour, tomato cup-a-soup, dry Italian dressing mix, baking powder, paprika, salt and pepper.
Separate egg whites from yolks and place whites in a bowl. Discard yolks.
Roll raw drumsticks in egg white, then coating mixture.
Spray baking pan with cooking spray.
Place coated drumsticks on pan in lower central rack of preheated oven. Set timer for 50 minutes.
...while chicken is cooking...

Rinse veggies you have on hand, cut and arrange on a plate. Serve with ranch dressing.

Some people might want a starch with this.Our family likes it just this way. If you want a starch, I suggest a nice loaf of multigrain bread or bread sticks.
